</div><div class="separator" style="clear: both; text-align: left;">One thing I never fail to do is when I'm stressed is cook. It's my little escape. This delicious plate was my dinner on Tuesday night. BBQ baked tofu, steamed broccoli, and a cheesy microwave baked potato.</div><div class="separator" style="clear: both; text-align: left;"><br />
</div><div class="separator" style="clear: both; text-align: left;"></div>I used Veganomicon's BBQ baked tofu recipe as a guide, substituting sesame oil for peanut oil and Stubb's spicy BBQ sauce for theirs. I also used a smaller dish when baking (think this also contributed to my "problem," below).<br />

All I can say is wow! While the tofu was not as chewy as I was expecting (I wasn't really sure what to expect as this was my first time baking with tofu, but I'm sure pressing the tofu a little more would solve my problem), it was 100% scrumptious. <br />
<br />
The coolest thing I learned this month was how to "bake" a potato in the microwave. This works with all potatoes. I love eating sweet potatoes as snacks while I'm studying and being able to create a quick, effortless side dish for my meals.<br />
<br />
For a medium sized potato, pierce it with a fork several times, wrap it in a damp towel, and microwave 5 minutes. Rotate the potato so the top is on the bottom and microwave another 5 minutes. For smaller potatoes, take off a minute for each period. I wouldn't recommend microwaving a large potato, I tried once and it turned out very dry and gross. <br />
<br />
For the broccoli, I've developed a "smell" method. I used to be really concerned with timing everything but now I know it's not that important. Just throw washed and chopped broccoli in a pot with a couple inches of water and cover. Turn the heat to med-high. When you can smell it, take it off! They should be vibrant green and maintain a little bit of crunch. Easy as pie.<br />

I actually made them as a birthday gift for Brian, who gave me the cookbook.<br /><br />I brought them to his party and they were a hit!<br /><br />It seemed like a lot of work for me, a novice without any fancy kitchen tools. It was just me, the ingredients, and a wooden spoon! I also spilled a lot of flour, oops!<br /><br />After having made two recipes so far (like that gives me any authority, LOL!), I can say that the cooking time needs to be shortened by a little. On both recipes cooking at the full time yielded slightly burnt cookies! I hope this will not be a problem for future recipes.<br /><br />Tonight I am making baked BBQ tofu, inspired by Veganomicon, for dinner. I will be posting it sometime later this week. Mostly. The waitstaff was nice but slightly incompetent. Two different people broke glasses. One server brought out to go boxes halfway through our meal. And no one remembered the mints! I don't want to support it. I am going to give up fast food again. Their beef was nasty anyway. What I will miss is Chipotle, but thankfully I don't have to. Most carry meat from supposedly naturally raised sources. Not all the meat is natural. At the Chipotle by my parent's there is a sign telling me the everything except the beef is natural. The one close to my apartment says everything is natural. The website even notes which locations carry what natural choices.<br /><br />Other places in Austin, like Elevation Burger and TerraBurger, are also good sources of convenient food with a conscience.<br /><br />I'm off to watch Old Boy and Gattaca with the Boy. I don't know why, but sometime during my childhood the government decided to have a Columbus Day observed on the Monday before the twelfth instead (actually I probably just grew up and realized what had been there all along). But I know in my heart that the twelfth is the TRUE day. Anyway.<br /><br />I decided to buy myself my first DSLR! It's a used Nikon D70 from a friend of mine. I've been wanting a DSLR forever, so this makes me very happy. The bread soaks up that runny egg yolk and mayo mixture and it is just mouthwatering. My mom used to make me sandwiches like this with egg, sliced cheese, and mayo for breakfast on the first day of classes in elementary school. I took her idea and beefed it up a little with turkey to fuel my college days!<br /><br />In my first picture you also see a little green pack and some blue pills. The blue pills are my UC medication. I have to take 4 everyday. I don't mind them because I can take them on an empty stomach and not feel nauseous, unlike the green pack...<br /><br />The green pack has my vitamins. It's designed specifically for women by <a href="http://www.amway.com/lstexas?">Nutrilite</a>. Nutrilite carries a wide range of dietary supplements that are organic and all natural. Because they are derived from natural sources and not synthesized, they are supposed to be easier for the body to digest. My pack has 4 pills:<br /><br />- <span style="font-weight: bold;">Daily Multivitamin/Multimineral</span>: Pretty obvious, the basic assortment of vitamins and minerals.<br />- <span style="font-weight: bold;">Ocean Essentials</span>: Fish oil rich in EPA and DHA omega 3's for brain function and blood flow.<br />- <span style="font-weight: bold;">Cal Mag D</span>: This one is specifically in the women's pack. It has calcium for strong bones, copper to promote collagen growth, zinc for bone maturation, and magnesium and vitamin D to aid in absorption.<br />- <span style="font-weight: bold;">Hair, Skin, Nails</span>: Also specifically for women, this pill has vitamin C, biotin, collagen, omega 3's, acerola concentrate, alfalfa dehydrate, glycine, grapeseed extract, horsetail, and l-cysteine. These antioxidants, amino acids, and proteins are the ones found in keratin, which makes up the skin, hair, and nails.<br /><br />I've found this specific assortment of dietary supplements has really helped me. Before I was diagnosed with UC, I lost a lot of nutrients and experienced bad acne and brittle nails. The multivitamin and HSN pill help with that. The fish oil is good in general for everyone, but also specifically helps those with UC heal and stay in remission. Lastly, the cal mag D is great for me because I find I don't drink milk like I used to. I loaded my cart up with all sorts of veggies-- broccoli, string beans, corn, carrots, romaine hearts, celery, cucumber, and grape tomatoes. Not very adventurous in my choices but it didn't matter to me, I just needed some green in my life again. When I got home I ate a huuuuge salad for dinner. I am satisfied once again :)<br /><br />I almost want to profess my love for veggies in a tattoo. Our names enclosed in a sketched heart, like you see scratched in on trees. SKP + Veggies 4 Ever.<br /><br />On to <span style="font-weight: bold;">Dr. Bronner's Magic Soap, </span><span>which I use for body wash</span>. I bought the almond scent and it is just heavenly. I seriously want to take a shower right now just so I can smell the soap. Here's what else I like about it:<br /><br />- the ingredients list is nice and natural. No sodium laurel/laureth sulfate (SLS) here!<br /><br />- I have read a few blogs where people use Dr. Bronner's to make laundry and even dishwasher detergent with it. That tells me people trust it both as gentle enough to not irritate skin when wearing the clothes, and as safe enough to clean the plate they eat off of. Another plus!<br /><br />- For the past two or three weeks I've had a strange rash (or persistent bug bites) behind my knees. For at least two weeks I had bright red bumps. They were so gross looking I didn't want to wear shorts. After using the soap, I found that the following day the rash/bite was no longer red and completely flat. It is not completely gone but I feel like the soap has helped calm whatever irritation it is.<br /><br />I even used it to wash my hair! I don't really recommend this... Haha. I only did so once because my current shampoo really irritates my scalp-- it gives me the itchies and every now and then flakes. Ew.<br /><br />What I don't like about the soap holds true for all bars I've experienced; although lathery and lubricant at first, the soap leaves a weird film of almost sticky, water repellent material. The oil in the soap, perhaps?<br /><br />I was previously using Pure & Natural's Almond Oil and Cherry Blossom scented body wash. I don't like it for two reasons; it has SLS and the scent wasn't so great. If you haven't already, I urge you to watch Annie Leonard's <a href="http://storyofstuff.org/cosmetics/">The Story of Cosmetics</a>, where she talks about SLS a little. It's in the same format as The Story of Stuff. If you haven't seen <span style="font-style: italic;">that</span> then definitely watch it also. You can find it at the same site. I had veggie spring rolls, a tofu stir-fry bahn mi, and some French cream puffs. The sandwich itself was ok, but the spring rolls were very fresh and plump. I also tried vietnamese coffee, which is just black coffee mixed with sweetened condensed milk, for the first time and I'm hooked. I've never had this flavor before. I like my coffee strong and the condensed milk added just the right amount of sweetness. They are actually the berries of the sapindus tree and contain naturally occuring saponin- basically soap that has many uses, including as laundry detergent.<br /><br />I recently bought a sample from NaturOli for $1.95, plus $1.84 shipping on Amazon. To wash, you toss the linen sack with a five or so nuts into your wash and let the washer do its thang. You can reuse the nuts several times, so my sample pack is good for about 5 washes.<br /><br />I chose NaturOli because they got the most positive reviews on Amazon. Most of them noted fabrics that were soft and required no softeners in the washing/drying process. My experience with these nuts is a little different. My clothes came out clean, with no scent (NaturOli notes you can add a few drops of your essential oil of choice to scent laundry), however the softness of my fabric did not seem to change. I may have not noticed anything due to the fact that I already use "environmentally friendly" laundry detergent, made by CostCo. I think soap nuts are a great alternative to many common detergents that contain harsh chemicals. However, even if bought in bulk, the price of soap nuts does not compete with the price of my CostCo detergent. As of right now, I'll be sticking with the liquid detergent.<br /><br />I do know the Kirkland Signature brand contains sodium lauryl sulfate, so that may sway me as I learn more about the ingredient in the future. This is my understanding right now: SLS is a skin irritant, but is not a carcinogen. Unfortunately, carcinogens are associated with SLS due to its production process- if done wrong, the carcinogens are produced and included with SLS in the products. I was really nervous that the food wouldn't turn out very well, but everything tasted great. I usually always order beef bun, but chicken is not only healthier for me and the environment, but also just as delicious as well. I love that they gave a generous portion of peanuts, rather than let it serve as only a garnish. Hai Ky is actually two stores down from <a href="http://www.yelp.com/biz/pho-thaison-austin-7">another pho place</a> I've been to, but the quality and taste are 100 times better (literally, read the reviews in the link). The cucumber was something I've never seen before in bun and gave it some great crunchy texture. I've only had bun so good at Kim Phung up North, but subsequent visits there showed me their greatness isn't always consistent. I have some great news. But first, an update.<br /><br />In my last post, I discussed being diagnosed with IBD. I'm now on <span style="font-weight: bold;">Mesalamine</span>, an anti-inflammatory drug, and seemed to get immediate results after my first dose. Within one day, I no longer was in pain and didn't feel like I had to rush to the bathroom 10 times a day. Because I felt so much better, I indulged myself in Short Stop fried chicken tenders and Wendy's bacon deluxes... and now I'm almost back to where I started. Anything high in animal fat, processed sugar, or irritating like alcohol or caffeine can trigger my IBD, giving me pain and all the other fun that comes with a flare up. I definitely need to follow a strict diet or I will suffer from the consequences. I've found that it's not hard to refuse alcohol at a party. There is usually at least one other person not drinking, and no one puts on any pressure. Avoiding beef is not hard either. I just order chicken instead when I go out to eat. I have been meaning to stop eating red meat, anyway. Only time can tell how long I'll avoid coffee...<br /><br />My mom has made me a big pot of ginger tea to drink. She say's it is supposed to help with digestion and inflammation. I feel so fancy drinking it out of this dainty, gold-rimmed glass. The good thing is that with the addition of a small spoon of sugar, I feel like I'm drinking ginger candy! I can definitely see myself drinking this in the future. Iced ginger tea, perhaps? I had a certain procedure done that involved me donning a hospital gown. I was VERY aware of the fact I wasn't wearing any underwear.<br /><br />The test results gave me happiness at first, but now I'm just sad.<br /><br />For one, I am relieved to finally know what is wrong with me. I have been battling this sickness for months now. I can start medication and go from there in my healing process.<br /><br />Unfortunately, what I have is a disease. It will never go away. I will have to restrict my diet for the rest of my life. I will probably be on medication for the rest of my life (unless I am able to find an effective alternative treatment. Google searches render conflicting results). If I eat the wrong thing, I will be battling these painful and annoying symptoms all over again.<br /><br />I am going to see my doctor again after I start medication. I am kind of fed up with him. I feel like I can never accurately explain my point or question before he starts talking. If I don't feel like all my questions have been addressed at this next appointment, I am going to see a new doctor.<br /><br />Anyway, I have an Inflammatory Bowel Disease (IBD). It's called ulcerative colitis (UC). According to my doctor, it is an autoimmune disorder that causes my immune system to attack my intestines. The result is an inflamed and ulcerated colon. As you can imagine, this leaves me with all sorts of fun digestive issues.<br /><br />I want to be able to eat anything. I've been striving for a healthier lifestyle anyway, but it's nice to be able to kickback and treat myself once in a while. I'm not gonna be able to do that anymore. From here on it's a strict diet. Even fruit might not be good for me because of their simple sugars. I can read a description for any sign and feel like some of it pertains to me. Libras are indecisive.<br /><br />I went through high school not sure what to study in college, whilst friends around me were already taking classes related to what they wanted to major in. My problem was too many choices. I'm interested in everything! I love art, food, music, math, history.... maybe not everything. I enjoyed studying for english but hell no was I studying it for another 4 years.<br />During my freshman year I had a hard time deciding what to do, I was undeclared. Even now, I've only decided to study for business because many people I know are taking business. But I felt unease in my heart.<br /><br />I think I've finally come to a decision. I love food! Why not study nutrition? I can help others choose a healthy lifestyle. There are many career paths for a dietitian. Maybe someday I can work in the government for the USDA or FDA. As much as I'm frustrated with the government in many ways, I actually want to contribute to it. That's another story though.<br /><br />I finally feel like this is something I want to do.<br /><br />It's going to be hard for me to switch. Class registration is already closed, but there is a small opening right before classes start. Unfortunately I have another complication. I'm receiving financial aid and if I want tuition money, all my classes have to qualify for whatever major I'm in. If I switch I'd have to re-certify my classes. I might not be able to pay tuition on time.<br /><br />I have to call my certification counselor tomorrow. The show is kind of like <span style="font-style: italic;">Diners, Drive-ins, and Dives</span>, but only features sweet treats. Ths episode showcased a New Orlean's snowball shop and I was drooling in seconds. Snowballs are different than snowcones because the ice is shaved, not crushed. As you might have guessed already, snowballs were invented in New Orleans.<br /><br />When I drove by Casey's last week, I knew I had to stop by. Today I had an opportune moment with my little brother in tow. I ordered a small with black cherry (my choice) and cola (my brothers) with some sweet condensed milk on top. The total was $2.50, a moderate price for the whopping amount I got. And boy was it DELICIOUS. The condensed milk mixed together to create this creamy, heavenly experience on my tongue.<br /><br />I can't compare it to any other snowcones or balls because I haven't had any in years, but if I'm ever in the area I'll be sure to stop by again. Isn't it breathtaking? I've never been, but just looking at this photo Navid sent me makes me bow in amazement to the earth. This canyon is a work of art 17 million years in the making. Mankind can make great art, but his greatest art is in being able to replicate nature, no?<br /><br />Call me a treehugger, but I'd love to minimize my impact on nature. Don't want to end up like those big'uns in Wall E who had to flee their whole planet. Meat's impact on the environment is my main motivation for going vegetarian. Of course it only lasted me all of 4 months... But I want to try again. My other motivations stem from not wanting to support companies that practice animal cruelty and from learning about how humans evolved on a diet that did not include a lot of meat.<br /><br />This isn't something I'm going to start now. Probably near the end of this year I will. My mom just stocked up on an 8-pack of Spam from CostCo (I know! I know, Spam is like the worst "meat" ever). I also want to wait until I see what's up with my digestive system. I've been to the doctor's twice already and I have another appointment scheduled for August.<br /><br />After my whole ordeal with the realtor yesterday, I went behind his back and talked directly to the property manager. :) I was able to get in touch with the owner, who will honor some of our requests, and we've decided to go for it! I will post more about it later.<br /><br />Now that I've gotten the apartment, though, I am anticipating being VERY broke. Last year my housing allowance was well over my living costs (in San Antonio) and I had plenty extra money to go shopping with, spend on food, and put in my savings account. This year, the housing allowance should be the same but the rent is waaay up. My utilities will probably take up the rest of the housing allowance, leaving very little for food. I honestly haven't done much these 3 months, except sit around and hang out with friends. I never did get a job. I only half-heartedly looked, and now I'm cringing as my bank account hovers right over zero. It's really nice to have a guy who will pay for you when you eat out, but even with free meals I try not to do it all the time. Sometimes it gets difficult though, because the boy comes from a family that likes to eat out together, when we get bored or hungry eating out sounds like a good option, and whenever large groups of us kids hang out the only feasible thing for us all to do is go to a restaurant.<br /><br />This is making me think about my dream date. I actually have a few right now.<br /><br />1. Have frozen yogurt (preferably chocolate with strawberries and almonds) and then go to Build a Bear. The boy already took me to Build a Bear on our first date :)<br /><br />2. Visit Austin Amish Furniture and act like very serious buyers. I am honestly interested in seeing what kind of furniture they have, but telling the employee a story about say... me and the boy buying our first house together, or even having a baby :O would make it so much more fun. Then visit Dream Bakery (a local bakery across the road), eat decadent pastries, and laugh about how much we got away with.<br /><br />3. Go to a pick-your-own farm. This is my most recent date idea. In the Spring and Summer there are black- and blueberries, tomatoes, watermelons, peaches, and much more. I wish I could go at 6:30 AM, right when the sun rises and the weather is bearable, wearing a cute sundress and a big straw hat. Then bring the big bounty home and freeze it, bake with it, and make smoothies, sorbets, ice cream, and cakes! I asked my realtor twice if only an application fee would be enough to start the processing on my paperwork and hold the apartment until we hear back from the owner, and he said yes both times. So I drive downtown a second time to drop off my application and fee. Right after I get back uptown again, he calls saying he actually does need a deposit. Great. Luckily my older brother who lives downtown was home and about to leave. We get him to drop off the deposit. Phew. But wait! Now the realtor's told me I need to pay another fee for the guarantor form, a form I haven't filled out or even seen.<br /><br />Mr. Realtor.... are there ANY more fees I need to know about? I don't usually wear much jewelry, or any super feminine clothes for that matter, so this outfit made me feel ultra cute. :)<br /><br />Today I just chilled at the Boy's and watched the Spain v. Germany game, cleaned out the inside of my car, and chowed on some organic and vegetarian tacos at Kerbey Lane Cafe. After I got home I ran some errands for my mom, and now I have to pack for D A L L A S! My trip to visit my girlies got postponed until tomorrow. For those that don't know, Oasis is a huge restaurant situated on Lake Travis, facing west so it has stunning views of the sunset. Around an hour before nightfall, the restaurant gets really crowded! Of course, my undecisiveness at Build a Bear made us kind of late to Oasis. With an hour wait time, we missed the sunset by a lot! It turned out pretty good anyway, because people by the lake were shooting fireworks. It was a really beautiful show.<br /><br />I orded the Mahi a la Pina, mahi fish with pinapple pico on Spanish rice with vegetables. It was kind of bland. Next time I'll stick to the real Tex-Mex! I'm going camping on Saturday night to celebrate my friend Neil's birthday, on Monday I'm going to orientation for UT and I can finally sign up for classes, and on Tuesday I will be driving up to Dallas to hang out with my girls Esther and Sharon! This is probably the most I am doing this summer. I was planning a road trip to California with the Boy but it would end up being too expensive. The show was canceled some years ago, God knows why, but after tonight I will now be able to enjoy little bits of mana from heaven, spoon fed to me from my TV. I stopped by the Sonic drive-thru to pick up a Reese's Blast (great diet food, I know!) at around 8:50. You know how long it took to get my order? TEN MINUTES. I didn't end up getting to his place until 9:15, thanks to several red lights along the way. I was super bummed that I missed the beginning of the new Futurama. It's electronic melodies are made by two New Yorkers and appeal to almost everyone I know.<br /><br />~~~~~~~~~~<br /><br />Since New Year, I've tried to start a successful work out routine at least four different times. The first few had the most momentum, lasting two or three weeks each, but eventually I stopped them all.<br /><br />To hell with looking at my arms and thinking they are flabby! As of last week I've restarted working out. Instead of just jogging every/every other day, I'm mixing it up with some light weight training, and will be paying more attention to my diet. It's really helpful that my dad got a family membership to YMCA, because there are locations downtown I can use after the move.<br /><br />My main goal for working out is to become healthier. I don't need a doctor to tell me that I sit on my ass too much! As of lately I've been feeling very lethargic, so hopefully this routine can kick-up my energy levels as well. My second goal is to look better. Who doesn't want to look their best at all times, no matter what they're wearing? I have two main culprits I'd like to get rid of-- fat on my arms and fat around my midsection, especially the love handles. My boy toy says he like's them, but hey, won't hips work just as well? Thirdly, I'd love to be more confident with my body. If I look and feel better physically, it follows that I should feel better emotionally and mentally as well!<br /><br />I've been going through a lot of changes in my diet lately, including my New Year's resolution to stop eating meat and my subsequent failure to uphold it, abruptly starting a vitamin regimen that also found its way to the non-habit side of my behavior, and a higher intake of junk food thanks to my parents' well-stocked kitchen and ice cream trips with my younger brother. I know that a healthy diet is essential to see all the changes I'<span style="font-style: italic;"></span>m hoping for, so I am definitely going to have to change. My first main change is the addition of protein shakes post-workout to boost protein and prevent sore muscles. The second would be to stop eating carbs at night!!! Midnight meals of Shin Ramen are definitely high on my list of bad habits . Thirdly, I need to add more fruits and vegetables into my diet. I believe I'm already big on eating whole wheat versus white bread and trying to avoid processed foods, but it wouldn't hurt to pay attention to what I'm eating a little more. ;)<br /><br /><a href="http://www.stumptuous.com/">Stumptuous.com</a> is a great place for women to read about weight training and related topics, and it's also the source of my <a href="http://www.stumptuous.com/workout-6">current routine</a>. It's fabulously short and easy, but it's also kicking my butt! After the first day of working out, my legs were sore for FOUR DAYS. If that's not a sign of how much muscle I'm lacking.... I don't know what is. I've got tons to talk about too; my future relocation to the heart of my favorite city and hometown, my job hunt, my decision to join Big Brother Big Sister, my new found love of cooking, and my piqued interest in knitting.<br /><br /> To start it off, I am now a student at the University of Austin! I am so excited to be out of San Antonio and back in Austin. For those that don't know, I decided to go to UT San Antonio for a year and then transfer to UT Austin. UTSA was a great school and I had a wonderful time. I got to meet tons of new people, I got to feel like I was an adult (although sometimes I'd rather go back to those good ol' middle school days!), and had an otherwise nice and easy transition into the college world. But it did have it's downsides. As someone who grew up in the Austin suburbs, I longed for the vibrant downtown atmosphere. In San Antonio, I was also in a sprawled out suburban location, where I had to rely on chain stores for everything I needed. The only two local coffee shops in the area had shut down years before I started school. Also, the classes were pretty much as easy as in high school. No problem there, and they were just freshman classes, but some real brain stimulation is always good. Something to make up for those Friday nights, perhaps? Heh.<br /><br /> Now that I am back in Austin, I am ready! I am ready to live downtown, walk to the coolest local shops, have my own pad, and decorate it too! This begins my quest to find a cheap, yet suitable apartment. It's a big jump from San Antonio, where my brand new apartment, with in-unit washer and dryer, free cable and internet, and all bills paid, was only $520 a month. Downtown Austin, most of the buildings are 40 years old, most don't have any bills paid, and there's still nothing decent below $600. Of course what I won't be getting in amenities I will get in location, and I don't mind that.<br /><br /> I have been searching high and low for apartments since around February. Back then I was planning on living with my good friend from elementary school, so we were looking for 2 bedroom apartments. Some things have come up though, so now I am going to be living on my own. This means I have to restart my search!<br /><br /> More and more everyday I am being thrust into the world of Adult-dom.
